Instructions
  1. Preheat the oven to 350F. Grease 9×5 loaf pan, you can also place a piece of parchment paper overlapping the edges.
  2. In a large mixing bowl, mash the bananas. This doesn't have to be complete mush, we find it better a little bit chunky. Add brown sugar, oil, vanilla, and coconut milk, whisk to incorporate.
  3. Sift in the flour, baking soda, salt, and cinnamon, and mix completely.
  4. Transfer the batter to your pan
  5. Bake for about 45 minutes, then cover with foil and bake for 10-15 minutes longer, until a toothpick inserted in the center comes out with just a couple crumbs.
Recipe Notes

Mix in chocolate, nuts and berries before baking if desired.
