It is absolutely to die for, we have to make these with caution because they are so addicting! Once we start eating these cheesy potatoes we just can’t stop!

When we make our Broccoli Cheddar Stuffed Potatoes we love adding extra cheese sauce. It adds an extra creamy texture that works wonderful with the crispy potato skin. The slight spice of the kimchi really adds a level of flavor to this dish and is so good for your digestion too!

Instructions
  1. Pre heat oven to 400°F. Start by washing potatoes and stabbing a few holes in each side.
  2. Place potatoes in the oven and bake for 35 - 45 minutes. You want the skin firm and crisp. Cut the oven time in half by microwaving potatoes for 10 minutes first.
  3. pan fry onions, garlic, mushrooms, spinach, chopped broccoli and kimchi in coconut oil until tender
  4. Remove potatoes from the oven and cut the top inch off of the potato. Scoop out the contents of the potato in to a bowl gently, keeping the shells as intact as possible.
  5. In the bowl with the potatoes add almond milk, salt and pepper and mash until smooth.
  6. Mix potato filling, half the cheese sauce, lemon juice and vegetables.
  7. Carefully stuff the potato mixture into the shells. Bake for 15 minutes and remove from oven.
  8. Drizzle remaining cheese sauce on top. Garnish with salt and pepper to serve.
