Broccoli Cheddar Stuffed Potatoes
Broccoli Cheddar Stuffed Potatoes are the perfect sides, appetizers, or even a whole carbohydrate heaven meal! Cheese sauce is amazing on anything, but it’s true perfect pair is potatoes! You’ll be craving this hearty dish at every dinner!
cheddar cheese sauce
unsweeted almond milk
salt and pepper
Pre heat your oven to 400°F. Start by washing your potatoes and stabbing a few holes on each side.
Place potatoes in the oven and bake for 35 – 45 minutes. You want the skin firm and crisp.
Remove potatoes from the oven and cut the top inch off of the potato. Scoop out the contents of the potato in to a bowl gently, keeping the shells as intact as possible.
In the bowl with the potatoes add almond milk, coconut oil, salt and pepper and mash until smooth.
Scoop the potatoes back in to the potatoes and cook for another 15 – 20 minutes.
pan fry onions, garlic, mushrooms, spinach, chopped broccoli and kimchi in coconut oil until tender
mix potato filling, half the cheese sauce, lemon juice and vegetables
stuff the potato mixture into the potato shells and serve with cheese sauce on top. Salt and pepper to serve.
