Buffalo Alfredo Bake- Lunch Serving

Buffalo Alfredo Bake may sound out of place, but trust us. The spicy buffalo sauce and the creamy Alfredo cream dance together in perfect harmony!

We have a classic Buffalo Alfredo Bake recipe, which is perfect for a dinner and left over lunches. But we love this version for more of a solo dinner or lunch. We bake this version in two small cast iron skillets, which gives the pasta a really rustic feel.

The creamy, savory Alfredo sauce coats each noodle with rich flavorful herbs. Which rub up nicely against the meaty soy curls doused in a bath of buffalo hot sauce. The unique spice of the buffalo sauce compliments the decadence of alfredo perfectly.

You could honestly eat this without baking it, and it would be delicious. But popping it in the oven to bake together with some vegan cheese shreds. It’s just a whole other level.

The texture is absolutely perfect for pasta dishes like this, but also for stir fries, sandwiches and everything in between!

Buffalo Alfredo Bake! Baked together in a savory and spicy casserole! Creamy Alfredo and Hot Sauce, there really isn't a better love story. We love this recipe as a yummy lunch or solo dinner recipe!

Instructions
  1. Preheat oven to 350. Prepare pasta as directed on box. Set pasta aside.
  2. Hydrate soy curls as directed on packaging. Add to an oiled pan on medium heat.
  3. Evenly coat soy curls in garlic powder, Italian seasoning, smoked paprika and lemon juice. Cook for 8-10 minutes stirring often. Stir in buffalo sauce and coat evenly. Set aside.
  4. In a separate pan add diced onions and tomatoes, cook for 5 minutes. Remove from heat and set aside.
  5. Prepare your alfredo sauce as instructed below. Stir pasta into alfredo sauce followed by soy curls, tomatoes and onions.
  6. Oil an oven safe baking dish, we use a cast iron skillet. Add sauced pasta to pan and spread out evenly. Top with vegan cheese and ground flax.
  7. We like to sprinkle some spices and nutritional yeast on top to really give it a nice crust.
Alfredo
  1. In a sauce pot on low-medium heat add oil, diced onion and garlic. Cook for 2-3 minutes, until onions are slightly translucent.
  2. Add coconut milk to sauce pot followed by nutritional yeast, lemon juice, garlic powder, onion powder, Italian seasoning, salt and pepper. Bring to a simmer.
  3. Bring a separate pan to medium heat. Add oil and flour and combine. Stir on medium heat for 3-4 minutes. Remove from heat and stir into the simmering Alfredo sauce.
  4. Continue to stir your sauce on medium heat for another 2 minutes. Remove from heat and set aside.
