Vegan Cheddar Cheese Sauce

This Vegan Cheddar Cheese Sauce is the perfect sauce for any cheese craving! Vegan Cheddar Cheese Sauce is the perfect pairing for so many of our favorite meals. We LOVE using this recipe for all sorts vegetable and pasta dishes. Most notably our Vegan Mac and Cheese works amazing with this cheese sauce!
Recently we’ve been experimenting a lot with stuffed potatoes, and it’s been absolutely perfect with this sauce. To be totally honest this sauce takes any food to the next level. The possibilities are endless, nachos, french fries, burger, broccoli, cauliflower, baked potatoes, pasta fillings, mac and cheese. The list never stops!
When we started making this sauce we started with the Instagram famous carrot and potato version. However, have found the onion provides a deeper note to the flavor. This recipe is completely dairy, soy and gluten free, which makes it very allergen friendly.
If you need to make this recipe nut free you can omit the cashews completely or substitute it for silken tofu. When you do substitute for silken tofu use about half (1/2) the package.

- 1 meduim russet potatoes quartered
- 1/2 large red onion quartered
- 1/2 cup cashews soaked overnight or boiled for 10 mins
- 1 carrot pealed
- 1/4 cup reserved cooking liquid
- 1 tbsp lemon juice
- 2 cloves garlic minced
- 5 tbsp nutritional yeast
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp tumeric
- 1 tsp smoked paprika
- 1 jalapeno pepper optional

- Bring a large pot of water to a boil and add onions, potato, carrot and boil until tender and drain.
- Combine all ingredients from the pot along with cashews and all the spices from the recipe, blend until smooth.
- Pour into saucepan and stir over medium heat
- Serve and enjoy!
We use a Vitamix for the perfect cheese sauce!
