BUZZFEED TASTY REVIEW – CHEESY BROCCOLI SOUP

That’s right guys! Today we have decided to attempt the impossible, we’re going to follow a recipe. We are NOT good at following direction in the kitchen, which has made us very good at getting creative with mistakes! But alas, a friend slid into our DM’s with a Cheesy Broccoli Soup that looked amazing! We’ve always pondered the legitimacy of these one minute Instagram cooking videos. So we decided to put it to the test, just how easy are these recipes?

Here’s our research:

Okay, so first thing we will say about this recipe is it’s ALOT of prep. We were washing, peeling, cutting for a solid 20 minutes, that did include prep of some other vegetables we were making as a side. We decided to make our sweet potato apple hash to pair with our Buzzfeed Tasty Cheesy Broccoli Soup. So as we were saying, the prep time is a lot, but pretty comparable to a dinner prep for us. We did make one MINOR adjustment, we didn’t have enough potato so we used a little sweet potato in it’s place. (2 regular and one sweet, the recipe called for 3 regular.)  After we had everything diced up we simmered the onions and garlic in avocado oil, then transferred the other vegetables into the pot. We left the veggies simmering in two cups of vegetable stock and covered for 30 minutes as the recipe suggested.

We then made our second adjustment and gave the veggies 45 minutes to simmer in the stock, only because the carrots were a little firm and we wanted it to blend well. At this point we unintentionally made our third adjustment when we realized our that we had completely forgot to soak the cashews, so we boiled them to attempt to soften them. We transferred the boiled vegetables to the blender in 3 small batches, it was a lot of soup to blend. The video kindly skimmed over the messy scooping of this massive batch of soup that could not possibly fit in a regular blender. After all the stock and veggies were back in the pot, we blended the remaining ingredients, while we steamed the broccoli.  

The blended ingredients are then slowly mixed together to give the soup a creamy texture, and the steamed broccoli is added. Everything mixed together extremely well, other than the little bits of cashews, but that’s on us.

We seriously LOVED this recipe, it worked so well as a dinner and reheated amazing the next day. (I even let my boss try it and they had NO idea it was vegan cheddar!). I will say as much as we loved it, we probably wouldn’t make it the same way again. Were already thinking of cool twists and turns we can take with this recipe! So definitely try this one out and let us know below what you think! Start to finish it took us about 90 minutes in total. Then about 10 minutes to get a decent picture of it

Instructions
  1. In a small bowl, soak the cashews in water for 1 hour.
  2. In a large soup pot, add the olive oil over medium heat. Add the onion and stir until translucent.
  3. Add the carrots, potatoes, garlic, and salt, and stir. Add 2 cups (480 ml) of vegetable broth, cover and simmer for 30 minutes.
  4. Transfer soup to a blender and blend until smooth.
  5. Set the soup aside and rinse out blender. Add remaining vegetable broth, cashews, nutritional yeast, paprika, and pepper, and blend until smooth.
  6. Combine the cashew mixture and “cheese” mixture in the soup pan and stir.
  7. Add the broccoli and stir to combine.
  8. Enjoy!
