Chocolate Chip Cookies – Vegan & Gluten Free

Chocolate Chip Cookies are one of those goodies it’s just impossible to turn down. A cold glass of almond milk and a warm chocolate chip cookie is just an invitation for bliss. Going gluten free and vegan doesn’t mean we stopped loving cookies, it just means we can’t binge as easily as we’d like too- or so we thought! These buttery, chocolaty cookies are as easy as can be! We are so in love with these chocolate chip cookies, and with just a few easy steps, you will be too!

We wanted to keep these chocolate chip cookies are simple as possible. Gluten Free and Vegan baking can get complicated fast. So rest assured, we broke this down to the bare bones! The biggest challenge we usually run into is finding the chocolate chips (though big brands have started releasing vegan chocolate chips) so we recommend  checking out the health food store.

Instructions
  1. Preheat oven to 375°F.
  2. In a large mixing bowl add flour, salt and baking powder.
  3. In a small dish combine 1 tbsp ground flax with 3 tbsp water. Let sit for 10 minutes.
  4. In a separate bowl mix vegan butter, sugar and mix until creamy. Add flax egg and mix.
  5. Slowly mix your dry and wet ingredients until dough consistency.
  6. Line a pan with parchment paper.
  7. Scoop cookie dough 2 tbsp at a time and press in to circles. Separate cookies by at least 2 inches on the pan.
  8. Bake for 9 - 12 minutes. Cool for 10 minutes.
