Dill Pickle Soup is an amazing twist on a cozy winter meal. The tang of dill with the mute tones of the celery and carrot make for the perfect dish! Dill is such an amazing flavor to carry a soup, especially with the contrast of chunks of potatoes. Packed full of fresh herbs and wonderful winter vegetables, this is a dinner that will make your soul come alive.

There is just something about a bright green herb that brightens up a meal (and mood). The color of life and an aroma that is just undeniable. Dill is one of our absolute favorite flavors to play with! Typically we go for a more dried herbs, which is a preference born out of convenience. Because it is a very distinct and bold taste, it’s important to really go for it when playing around with this herb. So the dried version just wont do the trick, you will get a very dull dill flavor. But of course, it will work in a pinch! Whatever gets the Dill Pickle Soup in the bowl!

Instructions
  1. Bring broth to a boil.
  2. Add diced potatoes, shredded carrots and diced celery. Cover and reduce to a simmer for 20 minutes.
  3. Add flour mixture, shredded pickles, and brine. Mix and let simmer for about 5 minutes while soup thickens.
  4. Remove from heat and garnish in separate bowls with coconut cream, pepper and fresh herbs.
