When we think holidays, we think garlic mashed potatoes and gravy! For many, the potatoes are an after thought in a large holiday meal. We think that is just an absolute travesty! The mild texture and flavor of the potato, it’s the best place to play with flavor! Notes of olive oil, fresh herbs and garlic give these potatoes a deep rich flavor to compliment any meal. We like to go heavy with the thyme and sage at holiday meals, but that is totally just a personal preference. 

Garlic Mashed Potatoes are incredible and yummy on their own, or pair well with a savory gravy. Feel free to go wild with the gravy. We are the type of people that love to drown our plates in tons of gravy, so judgment here. The creaminess of the dish acts as a perfect compliment to anything you can imagine. We like to serve our potatoes at holidays with our Roast Butternut Squash with Apple Sausage Stuffing to really ‘wow’ our friends and family! But the simplicity of these garlic mashed potatoes work wonders for even the most basic dishes. These potatoes make a great partner to a hearty chili or even a thick mushroom steak! Herb and Garlic Mashed Potatoes are creamy and delicious. The perfect addition to any meal, holiday or just a quick whip up through the week!

Instructions
  1. Peel and quarter potatoes. If you are looking for rustic dish you can leave the skin on, we like to call this smashed potatoes.
  2. Boil potatoes for 25 minutes or until soft. Drain and rinse potatoes.
  3. Add coconut oil, vegan sour cream and non dairy milk and mash until no chunks remain.
  4. Add garlic, granulated garlic, rosemary, thyme, salt, pepper and mix in with a spoon. Whip with a spoon for 30 seconds.
  5. Garnish with fresh cracked pepper, salt, fresh rosemary and fresh thyme.
