Jackfruit Alfredo Sauce – Vegan & Gluten Free!

Jackfruit Alfredo Sauce is the perfect vegan twist on an animal heavy classic! With meaty, tender jackfruit in a creamy Alfredo base, this sauce will satisfy any craving beast! We’re no stranger to Vegan Alfredo Sauce, it’s a recipe we’ve made 1000 times about a hundred different ways. 

We made this recipe initially with Bow Tie Alfredo in mind. But found it works with all sorts of dishes! We use jackfruit from a can when we make this recipe, but frozen would work just the same. Just make sure the jack fruit is cored, it will make the texture so much better! The key to using jackfruit as chicken is to cook it separately. Everyone has their own method to this, but we’ve found the yummiest way is to cook it down with onions, garlic and vegetarian chicken stock. We use McCormick All-Vegetable Bouillon Chicken Style.

We only recently discovered that there even was such a thing as “Vegetarian Chicken Stock”. It typically is in the form of bouillon cubes. It has all the flavor of chicken fat, but none of the chicken! Seriously, if you want to take your dinner to the next level, you gotta pick these up! If you are having issues finding the cubes, we have seen a paste version online before that would work great!

Instructions
  1. Lets start by preparing our jackfruit. Drain the jackfruit and remove the hard pieces from any remaining core. Add coconut oil to a pan on medium heat followed by onion, garlic and bouillon. Cook for 1 - 2 minutes.
  2. Next add jackfruit, pepper and nutritional yeast to the pan. Cook on medium heat for 10 minutes, stir often. Remove from heat and set aside.
  3. Prep your veggies with bite sized pieces in mind. We recommend julienne for some of the veggies in this recipe. Instead of trying to explain this we will just post a picture with this step.
  4. In a frying pan on medium heat add coconut oil, bell peppers, broccoli and onion. Cook until tender and turn off heat.
  5. Bring a pot of water to boil and prepare pasta as instructed on packaging.
  6. In a large pan or pot combine the jackfruit and Alfredo sauce. Next add your veggies and pasta making sure to coat all of the noodles evenly.
  7. We like to garnish with vegan cheese, toasted cashews and vegan parmigiana.
Quick Vegan Alfredo Sauce
  1. In a sauce pot on medium heat add onion and garlic and cook for 3 minutes.
  2. Add coconut cream, lemon juice, nutritional yeast, thyme, salt, pepper and turn the temperature down to low.
  3. Mix the corn starch and water in a separate dish until no clumps are left.
  4. Slowly pour and stir in the corn starch mixture to your Alfredo sauce. Bring to a simmer while stiring and return to low.
  5. If the sauces texture changes just return to heat and stir.
