Instructions
  1. Preheat oven to 425℉
  2. Wash potatoes thoroughly, dry and poke holes on both sides using a fork.
  3. Bake for about 45 minutes or until crisp on the outside and soft in the middle. or microwave for 5 minutes, checking often
  4. In a medium hot pan, add oil, mushroom and red pepper and cook until tender. Set side for later.
  5. Cut potatoes in half and scoop out the insides into a bowl.
  6. Add coconut oil, sour cream, salt, pepper, paprika and garlic powder to potato filling. Mash until smooth.
  7. Mix in remaining ingredients until evenly combined
  8. Coat the inside bottom of each potato skin with barbecue sauce and maple syrup Scoop the potato mixture back in to the shells.
  9. Bake at 425℉ for 15 - 20 minutes and top with green onion and vegan sour cream
Recipe Notes
  1. For a more calorie wise approach, half the coconut oil and add ½ cup unsweetened non dairy milk.
  2. If your vegan cheese isn't melting try the broil setting in your oven with the potato skins on the top rack.
  3. Speed this recipe up by microwaving the potatoes before baking.
