Beyond Sausage is definitely the best vegan GF sausage we have tried, but feel free to mix it up and experiment with different brands. The sausage is just a friend to this dish, it doesn’t need to be the center of attention. The gnocchi plays a similar role, as a complimentary texture to help balance out the acidity of the tomato. Instructions
  1. In a skillet on medium heat add olive oil, sausage, onion, bell peppers and garlic. Saute until sausage is browned.
  2. Add tomatoes, spinach, gnocchi and seasoning. Simmer uncovered for about 10 - 12 minutes.
  3. Stir in cheese and simmer until melted and remove from heat.
  4. Garnish with vegan mozzarella and vegan parmigiana.
