  1. In a skillet on medium heat add olive oil, sausage, onion, bell peppers and garlic. Saute until sausage is browned.
  2. Add tomatoes, spinach, gnocchi and seasoning. Simmer uncovered for about 10 – 12 minutes.
  3. Stir in cheese and simmer until melted and remove from heat.
  4. Garnish with vegan mozzarella and vegan parmigiana.
