Pesto Omelette

When we first got in contact with Eggcitables we were really excited to make all sorts of yummy egg based recipes. But something that we were extra excited by, was an omelette! We had tried our hand, like many others at a chickpea flour omelette and just could not quite make it work. But this premixed egg substitute made it super easy!

Once we had settled on making an omelette, we set to work on making the perfect filling. Pesto being one of our favorite foods was the obvious choice! We loaded this recipe with fresh basil and sunflower pesto! Sunflower seeds make for a very bold earthy undertone while the fragrant basil smooths out the edges for a savory kick. Absolutely amazing in combination with the more muted mushroom flavor!

Don’t be shy with the mushrooms! Because mushrooms add such a delightful meaty texture to make every bite an experience. While acting like mini flavor sponges and balancing out the flavor profile perfectly!

We love adding salsa or fresh tomato slices to lighten up the dish and give it a more summery feel. But a pesto omelette truly is one of those dishes you can really play around with and fill to your taste. Maybe some soft cashew cheese and cranberry sauce, or roasted pepper and potato? There’s really no stopping you once you get started!

Instructions
  1. In a mixing bowl whisk together Eggcitables and water until smooth. Mix in diced veggies.
  2. Add olive oil to a pan on medium heat. Pour omelette mixture into pan and gently guide the mixture to spread out.
  3. Cook for 3 minutes covered and carefully flip cooking for 3 more minutes uncovered. Flip again and immediately add vegan cheese to half of the omelette and pesto on the other half. Fold the pesto side over the cheese side and remove from heat.
  4. We like to garnish with vegan cheese and more pesto!

  1. Add all ingredients to a high speed blender and blend until smooth.
