Roasted Acorn Squash – Gluten-Free Stuffing {Holiday Recipe}

Roasted Acorn Squash is a recipe that pairs perfectly with our Sausage and Pear Stuffing. Which is why we included it in this recipe. The hot italian sausage and tart cranberries make a lovely addition to the sweet acorn squash. We like to use acorn squash to stuff, because of the easy to eat texture. The melt in your mouth texture of acorn squash makes it the perfect base for stuffing! This Roasted Acorn Squash will quickly take over your holiday traditions! 

Our recipe is obviously gluten free, because of a Nick blessing us with his celiac disease. But this recipe works exactly the same when you’re using regular wheat bread. So no worries if you wanted to make more traditional, you won’t have any extra steps! If you find your stuffing is drying out, just add a bit of oil to the top. The broth should keep the inside of the stuffing ball very moist but the top might lose some liquid while cooking. We like to cook the stuffing first and separately when we make this dish. The method to cooking the squash is extremely similar to the way we do our Butternut Roast. By roasting the squash first with some olive oil and salt and pepper. The butternut recipe stuffing method could also be used here, by tying the squash back together after it’s stuffed with cooking twine. But we prefer to do them more of an open faced style. Instructions
  1. Preheat oven to 375°F.
  2. Cut squash in half and remove seeds. Score insides with a knife and brush entire squash with olive oil. Sprinkle insides with salt and pepper.
  3. Line baking sheet and place squash face up. Bake for 35 minutes or until squash is softening all the way through.
  4. Brush insides of squash with maple syrup. Fill squash with stuffing mixture.
  5. Bake covered for 20 minutes or until soft all the way through.
  6. Serve garnished with salt, pepper, thyme, sage.
