Sausage and Pear Vegan Stuffing – {Holiday Recipe} – GF

Sausage and Pear Vegan Stuffing, filled with spicy hot italian sausage, tart cranberries and sweet pear. With the firm crunch of walnut pieces and soft bread filling, this stuffing will blow you away! We like to use this as a fail safe at any holiday dinner! The flavors in this dish really play well off of each other and make for the perfect holiday side! If opting for the stuffed squash method, you can bake the stuffing with a little extra oil and broth first separately. This way you’ll have stuffing that is a little more cooperative when filling your squash (or onions, we’re not here to put limitations on your creativity). Toasting the bread for this dish will prevent it from getting too soggy. Just be cautious not to over toast the bread, as you are going to be baking it.

Vegan stuffing that is also gluten free can sound intimidating. This is a really easy recipe with just a few basic swaps, gluten free bread and beyond sausages being the main ones. With that in mind the method stays pretty consistent to a traditional stuffing dish. Start by pan frying your sausage, onions, walnuts and cranberries with spices. Allowing them some extra time to really flavor each other before loading them into the stuffing with pear and bread pieces to bake.

Instructions
  1. Preheat oven to 325°F and cut bread in to one inch pieces.
  2. Spread out pieces of bread on a sheet pan and place in preheated oven. Bake for 15 minutes flipping halfway through.
  3. While bread is baking add oil to a skillet on medium heat. Cook onion, garlic and celery for 7 minutes or until soft. Remove from heat and add to an oven safe dish.
  4. In the same skillet cook beyond sausages for 7 minutes, turning often. Removed from heat and slice 1 inch pieces. Cut pieces in half and add to oven safe baking dish.
  5. Add pear, sage leaves, thyme, walnuts, cranberry's, salt and pepper to an oven safe baking dish. Pour broth over mixture in oven safe baking dish.
  6. Spoon bread crumbs into to mixture and cover.
  7. Bake for 30 minutes covered and 10-12 minutes uncovered.
