Sweet Potato and Sausage Hash – Vegan & Gluten Free
Spicy Sweet Potato and Apple Hash is great for breakfast but equally good for dinner. When it comes to dinner we have had it as a side with a delicious broccoli cheddar soup or double up on the recipe and indulged in a big helping of this hash alone. This recipe is the product of a late night craving and us putting off grocery shopping much longer than we should have. The result, a sweet and spicy dish that we keep coming back too.
Eating this brought camping to mind with the rustic feel and aromas floating around the kitchen. Depending what we’ve eaten recently we may use less or skip on the maple syrup altogether. If you’re okay with some sugar we definitely recommend giving the maple syrup a try. Something we recently started adding is the Sol Cuisine vegan sausage rounds. We cook them in a separate pan and crumble them in to the hash.
