Stuffed French Toast – Chocolate Hazelnut & Strawberry Rhubarb

Stuffed French Toast is sure to change your breakfast game! From the creamy chocolate hazelnut butter, to the tart strawberry rhubarb filling. Stuffed French Toast will tickle your taste buds with every bite! Since this is an indulgent dish, we recommend going all out and using fresh baked bread. You won’t regret it!

For the batter we utilized our favorite Canadian based egg replacer, Eggcitables!
When Eggcitables first reached out to us, we had high expectations and very excited to try it. Since playing around with it more, it has surpassed all of our expectations! Eggcitables is perfect for baking, batters and omelettes alike!

Because the ooey gooey inside of Stuffed French Toast is so flavorful, we have some recommendations for toppings! The best toppings are a light dusting of powdered sugar, whipped cream, fresh berries and maple syrup. The sweet and maple flavors are the perfect way to compliment the savory and tart notes of this delicious toast.

This Stuffed French Toast quickly has shot up our list of favorite breakfast foods, move over Pancakes! We really can’t say enough good things about it. It’s a little messy to make, you might have batter covered fingers a time or two, but other than that, flawless!

Instructions
French Toast
  1. Combine Eggcitables, milk, lemon juice, cinnamon and maple syrup. Whisk together until no chunks remain. This will be your french toast batter.
  2. Spread chocolate hazelnut spread on one side of half the slices of bread. On the other slices spread strawberry reduction on one side. Make sandwiches with 1 of each slices of bread.
  3. In a pan on medium heat add coconut oil. Fully coat sandwiches one by one in your french toast batter letting access batter drip off before transferring to frying pan.
  4. Cook for 6 - 10 minutes flipping half way through. You may need extra coconut oil if making sandwiches in batches.
  5. We recommend cutting your sandwiches in half and garnishing with powdered sugar, maple syrup, strawberry reduction and hazelnut spread.
Strawberry Reduction
  1. In a sauce pan on medium heat add strawberries, rhubarb, maple syrup, lemon juice and salt. Combine and cook until berries and rhubarb begin to soften.
  2. Use a potato masher and press berries and rhubarb leaving some chunks. Cook on low heat for about 10 minutes or until reduced 1/8. Remove from heat and set aside.
Chocolate Hazelnut Spread
  1. In a mixing bowl combine nut butter, water, salt, lemon juice, maple syrup and coco powder. Stir until fully combined and set aside.
