Taco Fries W/ Sofritas and Cheese Sauce

The only thing better than taco night, is taco week! We’ve made a lot of taco dishes in the past. Most recently Mexican style Mac and Cheese so we decided to keep with our taco theme and share these AMAZING Taco Fries with you! These have quickly become our favorite food in the whole world and we’re positive you’ll become addicted too!

Taco Fries we’re born out of a recent obsession with Tofutti Better Than Sour Cream (it seriously is better, don’t ask us how they did it, but they did!). We were loving the creamy texture and started making tons of dips and sauces for our french fries! Eventually that let to adding it on top of our fries, and an idea was born!

In creating this recipe we really tried to focus on key flavors and the mouth feel you would get from a taco! So we put on our thinking caps and thought “what is the perfect taco?” the truth is the answer is different for everyone. So even though we think ours is absolutely perfect, feel free to make substitutions, cooking is all about creativity! We stared with a base of crispy fries, seasoned with a little salt. Then we piled on the our homemade Sofrita, if you’re not familiar with this Chipotle classic, its essentially a spicy tofu crumble.

So now that we had the “meat” we had to pick a “cheese”. Luckily, It didn’t take long to pick! Our favorite cheese sauce was the clear choice. We use this sauce for everything, so we just added some jalapenos to give it the taco feel and generously poured it on. After all our french fries, sofrita, cheese, we thought MAYBE it was time for a couple vegetables. So we threw on some Pico de Gallo and homemade Guacamole. Which really brings a freshness to this carbohydrate heavy dish. Even though most people might think this dish is creamy enough, we aren’t most people. So we loaded on the Tofutti sour cream and really had a night of beautiful Taco Fries indulgence.

These fries are seriously so good, they are absolutely everything you could want in a meal. Taco Fries are so crunchy, creamy, savory, salty and everything in between! Because of how creamy we like our toppings, we love to deep fry our fries for this recipe, to make them extra crispy, but honesty an oven works fine and gives you that soft fluffy potato texture!

Instructions
Cheese Sauce
  1. Lets get this recipe started with our cheese sauce. Bring a pot of water to boil and add onion, potato, squash and jalapeno. Cook until soft and save one cup of cooking liquid, drain vegetables and add to a blender.
  2. Add cashews, lemon juice and all remaining ingredients under the cheese sauce above to the blender. Blend until creamy and set to the side for later.
Sofritas
  1. roughly dice up the brick of tofu. Warm a medium skillet with avocado oil and add the tofu. We like to use a fork and further crush up a lot of the tofu.
  2. Add lime juice and all other ingredients from the sofriats part of the recipe and cook for 8 - 10 minutes on medium heat. Set aside for later.
Taco Fries
  1. Okay so we have sofritas and we have cheese sauce so if you haven't already baked or fried your fries lets finish that off.
  2. Put your fries in bowls or on a plate and lets get building. First layer your Sofritas on the fries as desired. Next pour your cheese sauce on.
  3. If you are looking to impress with the presentation we recommend scooping the sour cream and the mushed avocado in separate baggies. Gently twist the open end so the contents in side are pressed tight to a corner. Cut this corner and squeeze on top of fries
  4. Finally finish with sliced Jalapenos and serve!
