Tofu Teriyaki Bowl (Vegan, Gluten Free)

We love the diverse flavours of this delightful deconstructed sushi roll. All of the delicious textures and taste without the price tag! We buy wasabi flavoured seaweed for this recipe specifically, but regular seaweed and wasabi would work just the same. Pickled ginger isn’t included in the recipe but is an amazing addition and we would definitely recommend it!
The avocado creates a wonderful change of texture that allows the deep tang of the teriyaki shine through. Mixed with the mute tones of the tofu and heat of the wasabi it leaves your tastebuds pleading for more. Our Tofu Teriyaki recipe can also be done with sushi rice if you are looking for a more maki roll feel. We like using jasmine rice simply because it’s more cost efficient and is a bit firmer for more of a crunch.
If you would like the seaweed to have more of a crispy texture, add it at the very end. Mixing in the seaweed to the rice will slightly hydrate and soften the texture. Both ways are delicious and personally we like adding it both ways into the rice.
Tips for Rice
With jasmine rice we don’t pre-rinse the rice and use the ratio 1 cup of rice to 1.5 cups of water. Bring your water to a boil and add rice, reduce to low heat and cover. Stir every 5 minutes until all the water has been absorbed. Add salt pepper and oil to fluff out. We have found the most success with this steaming method.
