Tofu Tikka Masala is the dream meal to shake up our routine. We love to rotate some fun, flavorful meals into our week to keep gluten free vegan eating fun and fresh! The tofu and potatoes add an extra creamy texture to the dish. While the fragrant and diverse spice profile adds a complex taste to perfectly compliment the mild texture. It will be an instant favorite in any household!

We like to make this dish in our slow cooker to really let the recipe come together on every level. Because the tofu and veggies will soak in a lot of the flavor from the sauce, it’s best to really give it some time. We like to pair this dish with rice and gluten free flat bread. We prefer O’Doughs Flat Bread, usually we like to graze the bread with a little oil and minced garlic. What is so fun about pairing with jasmine or basmati rice, is that it will combat any spice when dealing with a picky palette. So you can decide the ratio of rice to Tofu Tikka Masala and make it perfect for the whole family!

If you’ve been around the blog for a while, you might have noticed that we like to play fast and loose with the recipes. This one is definitely no exception, we like to mix up the veggies in this dish! There is endless possible flavor combinations when comes to this Indian inspired dinner. Instructions
  1. Add 1 tbsp coconut oil to a skillet on medium heat and add diced onion and green pepper. Pan fry for 5 minutes and add garlic, ginger, tomatoes and salt. Add ginger and tomato paste and cook for another minute. Transfer to Slow cooker or instapot.
  2. Add 1 tbsp coconut oil and diced potatoes to a skillet on medium heat and cook until the edges start to show some color. Transfer to slow cooker.
  3. Add garam masala, paprika, coriander, black pepper, salt, pepper, turmeric, cayenne pepper and cumin. Add coconut milk, apple cider vinegar, maple syrup and stir everything to combine.
  4. cook on medium for 3 to 4 hours or on high for 2 - 3. This recipe takes roughly 20 minutes in an Instapot.
  5. Serve hot garnished with lime juice and coconut cream. (Optional)
