Ultimate Vegan Breakfast Sandwich

The goal of the Ultimate Vegan Breakfast Sandwich was to fill the giant hole in vegan breakfast options. In a meal dominated by bacon and eggs, we knew we had to wiggle in some vegan versions! Because let’s face it, the vegan breakfast option is ALWAYS toast and fruit. Which is fine, but definitely doesn’t fulfill any cravings the way a hearty vegan breakfast sandwich does!

This is an amazing recipe to showcase our favorite Vegan Hollandaise. Since hollandaise is such a full flavor creamy sauce, it really brings out the best in every bite. Smokey tofu adds a deep ‘meat’ flavor that is usually pretty lack luster in a traditional tofu egg. It is almost reminiscent of a classic bacon flavor, but with none of the cholesterol and suffering.

We really wanted this recipe to highlight a lot of our personal faves in the vegan/gluten free world. From the Sausages to the English Muffins , even the Vegan Cheese Shreds have all significantly improved our breakfast game!

Ultimate Vegan Breakfast Sandwich
The Ultimate Vegan Breakfast Sandwich is loaded with creamy hollandaise, cheesy potatoes, hearty sausage and smoky tofu. Look out smoothie bowl, vegan breakfast never looked this good.

Instructions
Breakfast Sandwich
  1. Preheat oven to 350
  2. Dry tofu with tofu press or wrap in paper towel and set under a frying pan for 10 minutes. Cut tofu in to 1/2 inch by 4 inch pieces.
  3. Heat 1 tsp cooking oil in frying pan to medium heat
  4. Add cornstarch to a medium bowl, gently place tofu into cornstarch and coat evenly on all sides.
  5. Fry tofu in frying pan, turning occasionally until cornstarch crisps on all sides. Set aside
  6. In separate pan, heat up remaining cooking oil to medium heat. Add diced potatoes, lemon juice and spices, cook until golden brown
  7. Once potatoes are fully cooked, remove from heat and cover in cheese shreds. The cheese shreds should melt to hold the potatoes together, if the shreds are not melting, try covering the pan and placing on low heat.
  8. Cook breakfast sausages according to package
  9. Toast english muffins open faced in oven until warm
  10. Assemble breakfast sandwich and cover in vegan hollandaise Garnish with parsley Enjoy!
Vegan Hollandaise
  1. Add your soaked cashews and all other ingredients to a blender. Blend and blend a little more, you're looking for a smooth sauce with no chunks.
  2. Pour contents of blender in to a sauce pot and heat on medium for 3 - 4 minutes. This thickens surprisingly quick so we recommend stirring until the desired thickness is achieved.
  3. If sauce thickens too much add water 1 tbsp at a time until desired consistency.
Recipe Notes

Sausage

We prefer SOL cuisine but your favorite vegan sausage round will do.

If you happen to have some beyond sausage kicking around you can take this sandwich to the next level. Crumble beyond sausage and press in to patties. Add patties to a frying pan on medium heat and cook thoroughly.
