  1. Peel potato and onions cut into 1/4 inch cubes and boil in large pot of salted water boil until tender, drain and set aside
  2. add coconut milk, lemon juice, spices, garlic and cashews to blender and blend until cashews are smooth
  3. once smooth, add the potato and onion and blend until smooth the consistency should be a little thinner than a traditional cream sauce
  4. transfer to a sauce pan over medium heat, stirring occasionally until sauce thickens to desired consistency. This can take anywhere between 5-15 minutes.
