We love this  Vegan Butter Chicken! Like anyone else we can’t resist the tantalizing allure of a fragrant Butter Chicken sauce! Being vegan obviously we don’t mess with butter or chicken. We put on our thinking caps, thinking of ways to recreate one of our favorite non vegan indulgences.

What we came up with was a creamy mouthwatering sauce paired with mouthfuls of pull apart jack fruit meat. Aside from the AMAZING flavor, the full bodied aroma filled our kitchen in the best way. 

There is a few snags we have hit with this recipe in the past, specifically with the jack fruit. We have found that because the jack fruit has a sweet flavor, it can get weird. We have found that cooking the jack fruit with some vegan butter and poultry seasoning and salt cuts some sweetness. Preparing it this way first will give it more of a savory flavor, just be cautious not to over cook! Over cooking can cause the jack fruit to start to dry, so make sure you keep it low and slow to keep the pull apart consistency.

Instructions
  1. Start by prepping your jack fruit by draining brine and removing core. Give the jack fruit a little squeeze to remove excess moisture, allowing the fruit to fall apart and add to a pan on medium heat with two tablespoons of butter.
  2. Add 1 tbsp salt and all of your poultry seasoning. Stirring frequently with a wooden spoon until your jack fruit is browned and resembles shredded chicken. Set aside
  3. On medium heat, melt the remaining butter with the onion in a sauce pan and cook until onion is soft. Add the remaining spices, minced garlic and tomato sauce. Cover and allow sauce to simmer for 5-7 minutes
  4. Slowly stir in the coconut cream and add cooked jack fruit from earlier. Allow ingredients to cook together for 10 minutes on low heat
  5. Garnish with a squeeze of lime juice and chopped cilantro. Serve over a bed of rice
