Vegan Chicken Noodle Soup – Jackfruit Recipe!
Vegan Chicken Noodle Soup! It’s warm, soothing and the flavor instantly transports us to having hearty bowls of homemade Chicken Soup with our grandparents. We knew this was a recipe that we had to recreate. Being a recipe so dear to our hearts, we decided to perfect it and give it away to you as a gift.
As you can see the jackfruit looks AMAZING in this recipe. It would certainly have other vegans second guessing, but we can assure you, although it tastes like chicken. It’s totally plant based! We prefer to use jackfruit from a can (in brine) for our vegan chicken noodle soup, it just seems to be easier to work with.
We typically do this recipe in the crock pot and let it simmer for 4 hours. Adding the noodles just 10-15 minutes before serving to allow them to absorb the broth and soften. We use gluten free bow tie noodles, but you can easily use regular wheat noodles if you don’t have a gluten issue.
We’ve been playing a lot with jackfruit. We get a lot of requests for jackfruit recipes, it seems to be an ingredient a lot of people are intimidated by. We think this recipe hits a lot of bases and can’t wait to hear what you think!
