Instructions
  1. Get started by prepping your veggies as listed above.
  2. In a frying pan on medium heat add coconut oil, red onion, carrot, celery, onion and cook until soft. This only takes a few minutes, you don’t want to fully cook your mirepoix.
  3. You can add this to a pot but we are going to use a slow cooker. Transfer your frying pan contents to your slower cooker. Add vegetable broth, potatoes, carrots, celery, bouillon, chili pepper flakes and all other spices.
  4. Drain jackfruit and remove and hard pieces from the core.
  5. In a frying pan on medium heat add coconut oil, jackfruit, garlic and poultry seasoning. Next sprinkle your single serving of vegan chicken bouillon all over the jackfruit. Cook carefully until browned on all sides. Deglaze with a little veggie broth and scrape it all in to your slow cooker.
  6. cook on high for 4 hours or low for 6 – 8 hours, stirring occasionally.
  7. add the noodles 15-20 minutes before serving, watch to make sure they cook through
Recipe Notes

To make this in a pot instead of a slow cooker follow the same instructions but cook covered on medium heat for one hour or until potatoes and carrots are soft.
