Vegan Mozzarella Sticks
You read it right! Vegan Mozzarella Sticks and they aren't hard to make either. We have been thinking about attempting these for a while but didn't want to waste a precious bag of vegan cheese. We bought a bag of Earth Island Shreds and had the rest of the ingredients laying around the kitchen. We tried this recipe with Daiya shreds and Earth Island and both turned out fantastic. If we had to pick we would recommend Earth Island shreds, the flavor and texture is more authentic to the restaurant style we were picturing. A few helpful hints going into this one, do not rush things! You need to give the cheese time between the oven and the deep fryer, maybe even pop it in the freezer. Letting the cheese stabilize will make ALL the difference between a sad hallow mozzarella stick and a creamy gooey perfect one! Dipping sauce is the wow factor. As impressive as these sticks are on their own, a great sauce will get people talking! The classic pizza sauce is our favorite but we’ll play around with a creamy dill or a Smokey bbq if the mood strikes. Don’t be afraid to be creative , the sticks are a very neutral flavor so let your inner wild child play around with this one!

Instructions
  1. Get started by setting up your breading station. For this you will need three separate dishes. Add the following ingredients to their own dishes; bread crumbs, almond flower and non dairy milk.
  2. Next we want to set up a double broiler. For this you will need a pot about half full of water and a bowl or pot that can sit partially in the water. This is a great way to cook things that are sensitive to heat and easy to ruin. Bring the pot of water to a light simmer.
  3. Carefully place your bowl or second pot in the simmering water. Add your vegan cheese. we like to add some seasoning to the cheese, garlic powder and something a little spicy.
  4. Add a slight amount of oil to a bread loaf pan and spread cheese evenly. Put this in the freezer for half an hour.
  5. After 30 minutes remove your cheese from the freezer and cut in to ½ inch pieces .
  6. Now its time to use your breading station you set up earlier. Take one piece and dip it in your non dairy milk, put it directly in the almond flour and back in to the non dairy milk. Finish this off by gently rolling your cheese around in the bread crumbs.
  7. Fry in a deep fryer for 1 - 2 minutes. We only fry about 6 at a time, leaving an inch of space between each Mozzarella sticks. If you don't have access to a deep fryer you can fry in a pot of oil on medium heat. (Test the heat by dipping the tip of a Mozzarella stick in)
  8. When Mozzarella sticks are golden brown remove from fryer and transfer to paper towel. Gently pat down to absorb access grease.
  9. Garnish with salt, pepper, garlic pepper, chives and serve with Marinara sauce.
Recipe Notes

If you want a Mozzarella stick you can dip we recommend freezing your  ½ inch pieces over night, its well worth the bit of extra prep.
