Vegan Pulled “Pork” on a Bun (Jackfruit)

The secret to Vegan Pulled “Pork” is definitely Jackfruit! We love to slow cook our jackfruit on the stove in a sauce pan, in a smoky BBQ sauce. But have definitely have seen slow cooker versions as well!  We like to load it up with coleslaw and red onions and dive in! 

 

Jackfruit is such a perfect pork substitute! We have tried both frozen and canned jackfruit (not fresh yet, we wish!) and definitely prefer the canned. Just make sure if you buy the canned version, it’s in brine, not syrup otherwise it will be insane sweet for a “meat” recipe.

We do buy store bought coleslaw, even though honestly, it is probably the easiest part to make. So absolutely no judgement from us if you want to cut some corners! Whatever gets this yummy sandwich in your belly! Out of all of our recipes, this one is definitely one that bails us out the most for dinner. Its super easy and tasty and not a lot a mess, perfect for after your shift.

Instructions
  1. start processing your jackfruit. Drain the brine from the can of jackfruit and discard. Place jackfruit on a cutting board and cut off any large prices of the core. (The core is the dark pieces that are very hard)
  2. Add coconut oil to a sauce pot and bring to low - medium heat. Add the jackfruit, lemon juice, garlic powder and other spices and cover in half of the BBQ sauce. Cover with a lid and simmer for 30 minutes, stir occasionally.
  3. Stir in the remaining BBQ sauce and turn off heat. We cheat a little here because we buy our gluten free buns and coleslaw pre made. Find recipes in our tips section below.
  4. Toast your buns and build from the bottom up. If using lettuce we like to place that on the bottom. From there we add BBQ sauce, jackfruit, onion, tomato, cheese and Slaw.
Barbecue Sauce
  1. Sweat onions and garlic on medium heat .
  2. In a blender add ketchup, maple syrup, vinegar, mustard, onions, garlic and all reaming ingredients. (frozen or canned pineapple works) Blend until smooth.
  3. Transfer sauce from blender back to sauce pot and simmer on low heat for 10 minutes.
  4. Store any unused sauce in a sealed container and refrigerate for up to 5 days.
