Vegan Pulled “Pork” on a Bun (Jackfruit)
The secret to Vegan Pulled “Pork” is definitely Jackfruit! We love to slow cook our jackfruit on the stove in a sauce pan, in a smoky BBQ sauce. But have definitely have seen slow cooker versions as well! We like to load it up with coleslaw and red onions and dive in!
Jackfruit is such a perfect pork substitute! We have tried both frozen and canned jackfruit (not fresh yet, we wish!) and definitely prefer the canned. Just make sure if you buy the canned version, it’s in brine, not syrup otherwise it will be insane sweet for a “meat” recipe.
We do buy store bought coleslaw, even though honestly, it is probably the easiest part to make. So absolutely no judgement from us if you want to cut some corners! Whatever gets this yummy sandwich in your belly! Out of all of our recipes, this one is definitely one that bails us out the most for dinner. Its super easy and tasty and not a lot a mess, perfect for after your shift.
