Vegan Queso Cheese
Chile con queso ! Great as a snack , a dip , a topping, whatever you’re in the mood for! We make ours with an onion and sweet potato base! Every vegan website and their mother has their own vegan queso, and to be honest, they are all great. This is SUCH a good beginner vegan recipe and uses very simple ingredients that are already a staple in most vegan and sometimes non-vegan households. We always recommend this recipe to anyone just trying out vegan cooking , or if you have a vegan coming to your non vegan event. It’s so quick, tasty and will blend into wherever you’re serving it. We like to make our queso with sweet potato and onion , but realistically you can use any two veggies. Popular combinations are potato and carrot, we have also tried butternut squash and onion. So mix it up, try different things, meals that are made in a blender are the perfect place to get weird with it! Remember if it doesn’t taste like cheese, you need more salt and yeast.

  1. Boil onion and squash until soft.
  2. Save one cup of cooking liquid and add to blender with onion and squash.
  3. add all reaming ingredients and blend until smooth.
  4. Transfer to sauce pot and simmer for 5 minutes.
Recipe Notes

If soaking cashews over night is not an option soak in hot water for about 6 hours.

You can make this without simmering at the end and its still fantastic, a more garden fresh taste.
